Transparent Text - example attached

Usually, to make my text transparent I would reduce the opacity so that you can see the object directly beneath.  However, I'm having trouble working out how to make a graphic whereby there is an image on the bottom, a coloured box on top of that and finally the text on top of that.  The trouble is, the transparency only shows through to the layer immediately below and not the bottom image.  It's hard to describe so I've attached an example.

 

As you can see in the example, there is a yellow box beneath the text (presumably) but the text is transparent so that you can see the image behind that.  Any ideas?  Can't seem to find it in the Illustrator Help.
