Unexpected Change in Eyedropper Behavior

When I select a Text Object and then use the Eyedropper Tool to sample any other type of object, it now applies a secondary set of Fill and Stroke higher in the Appearance hierarchy instead of just changing the Fill/Stroke of the Text Object, creating a Mixed Appearances problem.

I've included a lot of screen grabs. the 00 images are the initial object states.

From there, A is a drill-down use of the Eyedropper tool that produces the correct end result, but now with two more required steps.

B is by just using the Eyedropper, resulting in conflicting double application of Fill and Stroke.
