How do I turn a couple of 'helps' off in Illustrator CC?

I've used Illustrator for many years, but the newer versions are a little over my head with the added 'helps' and I'd like to turn some off so I can get back to the basic drawing environment.   

 

Please give me the run-down on the following two most intrusive things I need to clear right away:

 

 

1.) green lines go shooting out as I hover the pen tool over the art board. I see that these are there to help me align with other points that have already been established but in the type of work I am doing I would rather have them turned off. What are these called? Where do they originate from which control pallette? and, how do I turn them  on and off?

 

2.) My drawing with the pen tool is influenced by some underlying 'fine grid' that is grabbing the pen tool and placing points slightly off from where I intended. Questions ralated to this: Is this just the pull down menu under 'view' and uncheck snap to grid only? or, is there some smaller grid configuration that is influencing the small 'snapping' action I'm experiencing.

 

These helps are great, but not in all work situations, so I just need some direction to turning things on and off to have a completly 'un-snappable, un-helpful' clean drawing environment I need on a current project.
